7-up Cake

INGREDIENTS
1 1/2 cups unsalted butter, softened
3 cups granulated sugar
5 eggs
3 cups all-purpose flour
Zest of 1 Lemon
Zest of 1 Lime
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 teaspoon almond extract
3/4 cup 7 Up
DIRECTIONS
Preheat the oven to 325.
Grease and lightly flour a 10 inch tube pan. Set it aside.
In a large bowl, cream the butter and sugar.
Add the eggs, one at a time, beating well after each addition.
Add the flour, extracts, and fruit zest.
Gently fold in the 7 Up, a little at a time.
Pour the batter into the prepared pan.
Bake for 80-90 minutes or until a toothpick inserted in the middle of the cake comes out clean.
Transfer the cake from the oven to a wire rack. Let it cool in the pan for 15 minutes.
Turn the cake onto a wire rack to cool completely.
Glaze
INGREDIENTS
1/4 cup 7Up
1/2 cup sugar
DIRECTIONS
On medium, combine sugar and 7Up in a sauce pan until the sugar is completely melted
Cool for 15 minutes
Poke holes in the warm cake and pour small amounts of icing slowly until you have reached your desired amount.
Dust with Powdered Sugar.
