Banana Cinnamon Rolls with Peanut Butter Icing



I absolutely love cinnamon rolls and adore almost anything naturally banana flavored. A great paring with banana is peanut butter. These two flavors complement each other well.

Try this recipe and enjoy the combination of this flavorful duo.


INGREDIENTS


Dough

  • 3.5 - 4.5 Cups Unbleached All-Purpose Flour (I used 4.5 cups)

  • 1 stick of unsalted sweet cream butter

  • 1 pack of Rapid Rise Yeast

  • 3 Ripe Bananas

  • I baked my bananas at 350 for 10 minutes

  • 1/2 Cup Vanilla Creamer

  • 2 T Honey

  • 2/3 Cup Granulated Sugar (Divide in half)

  • 1/2 Cup Very Warm Water - Not boiling, it will kill the yeast

  • 2 Room Temperature Eggs

  • 1 T Table Salt

Cinnamon Filling

  • 1 Cup Light Brown Sugar

  • 2 T Cinnamon

  • 1 t ground clove

  • 1/2 t ground nutmeg

  • Vanilla Creamer - Use as must to make a thick paste to spread on the dough.

Icing

  • 2 Cups of Peanut Butter

  • 2 T Pure Vanilla Extract

  • 6 T Salted Sweet Cream Butter

  • 1-2 Cups of Powdered Sugar, use more or less based on the consistency you enjoy


DIRECTIONS


Butter a glass mixing bowl - set aside

Bake the peeled bananas at 350 for 10 minutes - set aside to cool

Place 1/3 cup of sugar, honey, water, and yeast in a bowl - Stir and let set

Add cooled bananas and eggs in a mixer

In a saucepan add 1/3 cup of sugar, salt, creamer, and butter heat until the steam rises. Do not boil. (Place in a glass measuring cup or any other dish and place in the freezer to cool off

- no more than 5 minutes)

In the stand mixer, add the yeast mixture to bananas and mix, slowly incorporate warm milk mixture, (Be sure to not to scramble the eggs)

Once combined add the flour a little at a time until the mixture is sticky but solid.

( I used a stand mixer and let combine for 2 minutes)

Place dough in butter bowl and let rise 1 hour. (I used a tea towel)


Add all of the filling ingredients to one bowl and set aside


Flour a surface and place risen dough turn a few times, roll until 1 consistent flat layer, spread cinnamon mixture and tightly roll into a log.

Cut and place into a well-greased 9x13 pan.

Cover with plastic wrap and tea towel

Let rise for 1 hour

place in the oven at 350 for 35-40 minutes


Combine all the ingredients except powdered sugar and creamer in a stand mixer

Add the sugar and creamer a little at a time until you reach the desired consistency.

(Let combine for 2-4 minutes - it

Ice the cinnamon rolls while warm, dust with powdered sugar and Serve
