Ingredients
8 T unsalted butter room temperature
1 C sugar
3 large eggs
2 t baking powder
1/8 t corn starch
1/2 t sea salt
1/4 t ground cinnamon
1 T pure vanilla
2 C flour
1/2 C Buttermilk
3 C fresh blueberries
Rock sugar if desired
Instructions
Preheat the oven to 375°F.
Line tin with liners
Add soft butter and sugar and mix until well combined.
Incorporate eggs one at a time,
Add the rest of the dry ingredients except for the flour and stir.
When stirring add the flour slowly along with buttermilk, just enough to combine
Once combined add the blueberries
With an Ice Cream scooper, place one scoop in each liner. Be careful not to overflow
Sprinkle sugar on each muffin.
Bake the muffin 20-30 minutes, until completely done.
Let cool while resting on a wire rack.
