Cake Batter Cinnamon Rolls

Sometimes the smallest change can make a big difference.

I've taken the liberty to enhance a family recipe by adding one additional ingredient to enhance the flavor profile. Let's Begin!


INGREDIENTS

  • 1 cup whole or plant based milk (Warm)

  • 2 large eggs at room temperature

  • 2 1/2 t instant dry yeast

  • 1/3 Cup unsalted butter (Kerrygold is my preference or Country Crock Plant Based Butter)

  • 4 Cups all-purpose flour

  • 1 t salt

  • 1/2 Cup granulated sugar


FILLING

  • 1/2 cup very soft salted butter (Not Melted)

  • 1 cup packed brown sugar

  • 1 t nutmeg

  • 1/2 t all spice

  • 3 T cinnamon


CAKE BATTER CREAM CHEESE ICING

  • 1/3 cup softened unsalted butter

  • 2 cups powdered sugar

  • 6 ounces cream cheese room temperature

  • 1 T cake batter extract

  • 1/2 t pure vanilla extract

  • 1/8 t salt

DIRECTIONS


  • Pour warm milk in a stand mixer add the yeast.

  • Add the eggs, butter, salt and sugar.

  • Add in flour and mix jut until combined.

  • Set this mixture aside for 5 minutes to rest.

  • Attach the dough hook.

  • Beat the dough on medium speed to form a dough ball. Knead for 6 minutes or until smooth. (This dough will be sticky)

  • Spray a large bowl with cooking spray.

  • Place the dough in the greased large bowl. 

  • Cover the bowl with a warm towel .

  • Place the bowl in a warm place, let it rest and rise until it is double its size.

  • Turn the dough on a lightly floured surface. 

  • Flour a rolling pin and roll the dough into a rectangle.

  • Spread the cinnamon filling over the rectangle, but leave at least 1/2 inch at the end without filling. Once you start rolling the dough the inside cinnamon mixture will move to the edge

  • Roll the dough nice and firm, but not to tight 

  • Cut the dough with a serrated knife or dental floss

  • Cut in half then then cut the halves in half yielding 12 -14 rolls

  • Set aside and cover with a warm towel or plastic wrap until double in size

  • Preheat the oven to 375 degrees.

  • OPTIONAL: Lightly glaze each roll with whole milk, heavy cream, or coconut milk.

  • Bake at 375 degrees for 18-25 minutes - (The baking time will depend on the size of the rolls)

  • Combine all of the ingredients for the cake batter cream cheese icing in a sturdy bowl top each cinnamon roll generously.

  • Enjoy!
