Chocolate Loaf

This rich chocolate creation is an Ode to my chocolate lovers.




Ingredients

  • 1 C all purpose flour sifted

  • 3/4 C unsweetened cocoa powder - Use the best you can find

  • 1 C granulated Sugar

  • 1/2 C Dark chocolate Chips tossed in flour - This will prevent them from falling to the bottom of the loaf

  • 10-15 large Dark chocolate chips - Not covered in flour

  • 2 t baking powder

  • 1/8 t salt

  • 2 large eggs, room temperature

  • 6 T melted butter - until it turns brown

  • 1/2 C coffee - the darker the roast the better the flavor

  • 1 T pure vanilla

  • 1/4 C warm buttermilk - warm whole milk may also be used

Instructions


  • Preheat the oven to 350°F

  • Grease loaf pan and line parchment paper

  • Place the butter in a small pan and melt until brown butter is formed. Set aside to cool

  • In a large bowl empty the flour, cocoa powder, baking powder and salt

  • Stir eggs and sugar until combined.

  • Add butter, coffee and vanilla extract, and mix until combined.

  • Pour wet ingredients into flour mixture and stir. After combined add the warm milk stir gently add chocolate chips

  • Pour mixture into the pan and bake for 39 minutes or until a toothpick comes out clean

  • While resting the Chocolate loaf add the large chocolate chips on the loaf and let melt naturally.

  • Once cooled lift loaf out the pan and cut once completely cooled or slightly warm.
