Cinnamon Candy Apples

During Valentine's Day season, my Mum would make candied apples. Usually, we could only get these apples at the Fair or when the Carnival came into town. The house would smell like a warm cup of cinnamon tea. The bubbling of the candy sugary syrup would crackle and pop in the kitchen, we knew those apples were about 30 minutes from consumption. I hope you enjoy them.


Ingredients

  • 2 tablespoons distilled white vinegar

  • 5 small to medium apples

  • 5 lollipop sticks or other sticks

  • 3 cups granulated sugar

  • 1 cup - light corn syrup

  • 1 ½ cups luke warm water

  • 1 teaspoon red food coloring

  • 10-12 drops cinnamon oil

Instructions

  • Remove the wax from the apples.

  • Bring a large pot of water and vinegar to a boil over high heat.

  • Lower the heat and one at a time place an apple in the hot water for 2-3 seconds. Quickly remove the apple and rub dry with a few paper towels.

  • Line a cookie sheet with parchment paper. You can butter it or spray with cooking spray.

  • Place a stick of your choice inside the apples center.

  • For the Candy coating, stir the sugar, water, corn syrup and food coloring into a heavy duty medium pot.

  • Continue cooking until the mixture reaches 300 degrees.

  • Remove from heat

  • Stir in the cinnamon oil.

  • Dip an apple into the candy coating and slowly turn the apple and coat all the sides.

  • Place on the parchment and cool completely before cutting.

  • Enjoy!
