Collard Greens

Some may mistake the aroma from these southern styled collard greens for smoked turkey. Well they would not be 100 incorrect. This recipe contains a smoked turkey legs and chopped garlic. The combination of the two is sure to bring your family to the kitchen to take a peek.


INGREDIENTS

  • 2 pounds of collard greens

  • 1 medium chopped white onion

  • 2 T Olive oil

  • 4 T of minced garlic

  • 3 cups of chicken broth - Water will also work

  • 1 large cooked smoked turkey leg or 2 cooked smoked ham hocks

  • salt and pepper according to taste

DIRECTIONS

  • Place in a large bowl of cool water and 1 T of salt, soak for at least 2 minutes, rinse well.

  • Cut the stems out each leaf, then cut into bite size pieces.

  • In a large Dutch oven heat the olive oil, add the onions and cook until they become soft and translucent.

  • Continue to cook the onions, add the garlic, chicken broth, and turkey leg.

  • Slowly add the greens into the Dutch oven, while bringing it to a boil.

  • Once it has come to a roar turn down the heat to low, place the lid on the Dutch oven and simmer for 50 to 60 minutes.

  • (Cook the greens according to your desired texture)

  • After 50 minutes or so remove lid and also the turkey leg bone.

  • The meat will fall off of the bone, chop the meat and stir into the greens.

  • Add salt and pepper according to you taste and serve.

  • Enjoy!
