One of the best dishes I've had was in Vegas, "Lobster Risotto" from Gordon Ramsey's Hell's Kitchen restaurant. Hereis a Risotto Recipe you can make at home.
1 T extra virgin olive oil, (Light or smooth tasting)
1 T Minced Yellow Onion
1.5 Cups of Arborio Rice
3 cloves minced garlic
1/3 C White wine
4-5 cups lobster stock
2 T Mascarpone
2 T Cream Cheese
1/2 t Onion Salt
3 T unsalted Butter
zest of 2 lemons
1 T Tarragon
1 T Chives
1/4 cup roasted corn
salt & pepper
2 tablespoon chives
1 Med to Large Broiled Garlic Buttered Lobster
In a large pan over medium heat, add olive oil, garlic and onions. Cook until softened
Add the rice, cook for 2 minutes add wine.
Once wine is added cook for a least 1 to 2 minutes while stirring
Add 2.5 cups of the lobster stock, stir and cook until the rice absorbs the stock.
Add remaining stock a little at a time and let the rice absorb the liquid. i
Once the rice turns lighter in color or Al Dente continue to cook for 15-20 minutes.
Add the butter, mascarpone and cream cheese, lemon zest, onion powder and salt & pepper [to taste].
Stir well until all ingredients are well combined and thick.
serve and garnish with chives, tarragon, and roasted corn.
Enjoy!
