Plant Based Angel Hair Pasta and Sauce

Plant based marinara sauce with Veggies, Vegan meatballs and Angel Hair Pasta. It sounds like a big production but it is simple. This dish is a spin on traditional pasta for those in your family who may be vegetarian or vegan. The sauce is a bit on the sweet side but the garlic you crave is not hidden.


INGREDIENTS

  • 1 lb angel hair pasta whole wheat or other pasta per your taste

  • 1 pack of plant based Beyond Beef cooked and drained or create your make meatballs with the Beyond Beef.

  • 1 medium onion diced

  • 2 Tablespoons of Olive Oil

  • 1 medium yellow, orange, and green pepper

  • 5 small White or Brown Mushroom chopped

  • 4 cloves garlic minced

  • 1 small can of tomato paste

  • 1 28 oz. can whole tomatoes

  • 1 cup Vegetable stock - More if you like the sauce less thick

  • 2 Tablespoons dried basil

  • 1 Tablespoon of Onion Powder

  • 1 Tablespoon Mrs. Dash Italian Medley Seasoning

  • 1 Tablespoon Mrs. Dash Garlic and Herb Seasoning blend

  • 10 fresh leaves fresh basil julienned

  • 1/3 cup of Mae Ploy Thai Chili sauce

  • 1 pinch red pepper flakes

  • sea salt and pepper to taste

  1. Sauté' the onion in the olive oil until translucent, add minced garlic, peppers, mushrooms, just until al dente'. (Set Aside)

  2. Add the dried basil, red pepper flakes and whole tomatoes, tomato paste, and vegetable stock into a sauce pan. Simmer for 5 minutes then blend with immersion blender.

  3. Once the sauce is blended add the pan of sautéed veggies.

  4. Add the seasonings and Mae Ploy Thai chili sauce, salt, and pepper.

  5. Stir in Beyond Beef.

  6. Bring to a boil, reduce heat to a simmer and cook partially covered for about 20 minutes.

  7. Stir in fresh basil.

  8. Add more seasonings to taste if desired

  9. Cook pasta as stated on the package

  10. Drain well and plate

  11. Add the amount of sauce as desired

  12. Enjoy!
