Southern Candied Yams

If you desire a side dish sure to please those who love true southern cuisine, you may want to try these!


INGREDENTS

  • 4 Large to Extra Large Sweet potatoes or Yams

  • 1 Cup (Granulated) White Sugar

  • 2 Cups Brown Sugar

  • 2 Sticks Quality Salted Sweet Cream Butter

  • 4-6 T of Heavy Whipping Cream – (for added flavor you may use Creamer of your choice)

  • 3 T Pure Vanilla Extract

  • 3 T Cinnamon

  • 1 T Ground Cloves

  • 1 T Nutmeg

  • 1 t All Spice

  • 1/8 t Ginger


DIRECTIONS

  • Heat the oven to 350

  • Place 1 stick of butter in a 9X13 baking dish and let the butter melt in the baking dish

  • Once melted coat all sides of the dish leaving the rest at the bottom of the pan for the potatoes to rest in

  • Peels the Potatoes and cut into desired thickness

  • Rinse and pat dry

  • (I like to cut them nice and thick as they shrink)

  • Place the cut Potatoes into the baking dish to for the first layer

  • Set Aside

  • In a sturdy sauce pan, melt 1 stick of butter

  • Once melted add the White Sugar and stir

  • Add the Brown Sugar and stir

  • Continue to stir for at least 2-4 minutes

  • Mixture will be thick

  • Incorporate the Vanilla

  • Add all the spices

  • Slowly incorporate Heavy Whipping Cream

  • (You may add more or less depending on your desired consistency)

  • Once you reach your desired consistency continue to stir for 4-5 minutes

  • Pour liquid slowly on the first layer of sweet potatoes

  • Add the next layer

  • Pour over the last layer until barely covered.

  • Cover with Foil and vent

  • Cook at 350 for 35 minutes

  • Uncover and bake another 25-35 Minutes (Depending on the thickness of the potato)

  • Let Rest for 15-30 (This will prevent them from breaking) and Serve

  • Enjoy!
