Southern Style Green Beans

Growing up, Sunday dinners were not the same if someone brought over green beans and it did not have bacon in it. Using at least a pack of hearty cut smoked bacon in Daddy's green beans always made the house smell like a summer day on the Fourth of July and the grill was just turned on. Oh how I loved that smell. Well it's your turn to make some memories with these smoked bacon green beans.


INGREDIENTS

  • 1.5 pounds of fresh green beans, cleaned and snapped

  • 8 slices smoked thick bacon cut into small pieces

  • 1 cup chopped white onion

  • 3 garlic cloves minced

  • 1/8 t red crushed pepper

  • 1 cup of Veggie or Chicken broth

  • salt and pepper to taste

  • Optional ==> 5 small red potatoes cut in 1/2

DIRECTIONS

  • Cut bacon into bite size pieces.

  • Reserve as least cooked 2 pieces to add to the top

  • Cook in a hot skillet.

  • In a large sauce pan or Dutch oven add the beans, salt, red and black pepper, chicken stock, garlic.

  • Optional ==> add small red potatoes

  • Bring to a boil, cover with lid, and simmer on low heat for at least 1 hour.

  • Stirring occasionally.

  • Add cut pieces of bacon to the top and serve.

  • Enjoy!
