SPT - Sweet Potato Toast

Directions

  1. Preheat oven to 350℉.

  2. Place a wire rack with parchment paper under the rack to catch the drippings.

  3. Trim both ends from the sweet potato .

  4. Slice sweet potato lengthwise 1/4-inch thick. (If you slice them to thin they will loose their shape)

  5. Organize in a single layer on the rack.

  6. Bake for 15-20 minutes or until tender

  7. If you do not want to place them in the oven you can place them in the toaster at least 6 times for a total of 15 minutes, hence the name sweet potato toast.

  8. Remove pan from oven and allow potatoes to cool on wire rack completely before transferring to a lidded container storage container. Store in the fridge for up to 4 days.

  9. Mash 2 very ripe bananas, add a dash or two cinnamon, nutmeg, and allspice. Place on the tender cooked sliced pieces of sweet potato add fresh blueberries and roasted sunflower seeds.
