INGREDIENTS
3 cups cooked and peeled sweet potatoes
1/2 cup sugar
1/2 cup butter, melted and cooled
1/2 cup heavy cream
2 large eggs
2 t cinnamon
1 t nutmeg
1/8 t ginger
1 T vanilla extract
TOPPING
1 cup brown sugar
1/2 cup sifted flour
1 cup roughly chopped pecans
1/2 cup unsalted sweet cream butter
DIRECTIONS
In a food processor sweet potatoes, sugar, melted butter, heavy cream, spices, eggs, vanilla, and puree smooth ( Some prefer it a bit lumpy, your choice)
Grease or (use a non-stick spray) a baking dish.
Pour mixture into the baking dish and spread evenly.
In a medium bowl, stir flour, brown sugar, and pecans.
Slowly stir in melted butter into the mixture just well enough until everything is coated.
Add the mixture over sweet potatoes.
Bake at 350° F oven for about 30 minutes.
