Sweet Potato Casserole

INGREDIENTS

  • 3 cups cooked and peeled sweet potatoes

  • 1/2 cup sugar

  • 1/2 cup butter, melted and cooled

  • 1/2 cup heavy cream

  • 2 large eggs

  • 2 t cinnamon

  • 1 t nutmeg

  • 1/8 t ginger

  • 1 T vanilla extract

TOPPING

  • 1 cup brown sugar

  • 1/2 cup sifted flour

  • 1 cup roughly chopped pecans

  • 1/2 cup unsalted sweet cream butter

DIRECTIONS

  • In a food processor sweet potatoes, sugar, melted butter, heavy cream, spices, eggs, vanilla, and puree smooth ( Some prefer it a bit lumpy, your choice)

  • Grease or (use a non-stick spray) a baking dish.

  • Pour mixture into the baking dish and spread evenly.

  • In a medium bowl, stir flour, brown sugar, and pecans.

  • Slowly stir in melted butter into the mixture just well enough until everything is coated.

  • Add the mixture over sweet potatoes.

  • Bake at 350° F oven for about 30 minutes.

  • Enjoy!
