Sweet Potato Pie

My aunt Nita loves to cook. It is not surprising see her make a sweet potato pie for the neighbors to thank them for their kindness. This recipe is a combination of recipes. It is bit of the classic mixed with the new. The orange juice in this recipe will brighten and enhance the flavors of the sweet potato. I hope you give it a try.


INGREDIENTS

  • 1 pound sweet potato ===> Peeled - Cooked - Mashed

  • ½ cup butter, softened

  • 1/2 cup brown

  • 1/2 cup granulated sugar

  • 1/2 cup condensed milk

  • 1 T pulp free orange juice

  • 1 T flour

  • 2 large eggs eggs

  • 1/4 t salt

  • 1/2 t ginger

  • 1/2 t nutmeg

  • 1/2 t all spice

  • 1/2 t cinnamon

  • 2 T vanilla extract

  • 1 - 9 inch unbaked pie crust

DIRECTIONS

  • Preheat oven to 350 degrees

  • In a mixer add the mashed sweet potatoes and butter.

  • Stir in flour and mix until combined, add the sugars, nutmeg, cinnamon, all spice, ginger, salt, evaporated milk and vanilla.

  • Add the eggs one at a time, once combined add the orange juice.

  • Beat the mixture until it reaches a smooth consistency.

  • Place empty pie crust on a foil lined cookie sheet.

  • Pour filling 9 inch unbaked pie crust.

  • Bake at 350 degrees for 55 to 60 minutes,

  • Insert a toothpick or knife in the center, if it comes out clean the pie is finished.
